After three years of searching, Heribert Bayer found the soil and foundation he deemed perfect for creating Austria’s top red wines in the Neckenmarkter Hochberg region, with its historic vineyards. That same year, the winery produced its most famous and best-selling red wine, In Signo Leonis Cuvée, or "Under the Sign of the Lion."

The wines are given the utmost care, and above all, they are allowed enough time to mature. Whether aging in small French oak barrels or in the bottle, every wine is granted the necessary maturation period, allowing them to be presented in perfect harmony, revealing their full finesse and aromatic spectrum. Every year, a certain quantity of wine, particularly from the In Signo series, is consciously held back.

In 2004, the construction of an additional bottle storage facility began, with a theoretical capacity of nearly 500,000 bottles, marking a key milestone. To this day, the winery remains a leader in the German-speaking world, showcasing the impressive vintage depth typical of Austrian wines.
